I live in Madison, Wisconsin. That is just about the center of the delicious cheese universe. The oldest cheese I've had the pleasure of sampling was some 15 year cheddar. I work downtown and there is a cheese store on the capitol square (Fromagination) where I typically buy mine. I have recently been on a Hook's brand buying binge. I particularly like their
Hook's 8 year white cheddar. It tastes good with almost anything. It is especially delightful when placed on a chicken breast near the end of its grilling cycle in addition to some of my brown sugar caramelized pecans. I almost started salivating just thinking about it.
I have been experimenting a lot recently with different grilled cheeses. I made a very fantastic specimen last weekend on some locally made sourdough with gruyere, 8 year cheddar, and some young gouda. OMNOMNOM.
