Only Americans and Canadians do that because your food rules require them to be washed to remove any trace of whatever was left on the eggs but also removes their protective coating, leaving the eggs vulnerable to infection.

Our food safety rules are mostly about things appearing as sterile and un-foodlike as possible. It's ingrained, though. Shelf stable products sell better if you sell them out of a refrigerated retail space, regardless of necessity. (You should absolutely refrigerate USDA graded eggs)

There's a difference between washing and stripping off the outer layer of the egg though. It's like you're not calling a person clean until they've scrubbed off half their skin.

Why? Potatoes are routinely shipped in bags covered in dirt and very likely ****. We could sell them peeled and then refidgerate them, but we don't. The egg thing is almost completely arbitrary.

I have, actually. Repulsive, but clearly one of those "acquired taste" sort of things. If I stuck with it, I'd probably grow fond of it. Hated beer the first few times, too. Fortunately I'm not a quitter.

Nope. I'm not really much of a fear factor food person, just happened to have had lutefisk before. That said, offal based food doesn't bother me unless it also tastes terrible. Sheeps lung and oatmeal? In!
